Summary

Xochimilco, a historic region with deep cultural and nutritional significance, harbors over 20 species of edible insects, five of which exhibit exceptionally high protein content (45.25–60.75%), including essential amino acids. These insects—gusanos de tepozán, gusanillos de nopal, capulmimichis, picudo de nopal, and gusanos de maíz—are consumed in larval stages, offering a temporally available yet nutrient-dense alternative to traditional staples like maize and beans. The study highlights their balanced macronutrient profile, meeting dietary requirements while reflecting indigenous culinary practices dating back to pre-Hispanic times. This research underscores the untapped potential of Xochimilco’s biodiversity as both a historical food source and a sustainable protein solution for modern diets.
