Summary

In the M'Zab Valley dried agricultural products serve as a vital food source for impoverished populations but face significant socio-economic and technical challenges. A study revealed that 73% of retailers lack awareness of proper processing techniques, while 68% prioritize profitability over quality preservation. Despite rudimentary handling and storage systems, 68% of retailers view the activity as profitable, with 55% being illiterate or having only Koranic education. The research, combining bibliographic data and stakeholder questionnaires, highlights critical gaps in infrastructure, processing methods, and commercial practices that hinder sustainable development in this Saharan ecosystem.
